Semi-wild tea trees are picked in late April, and the leaves are allowed to oxidize to become hongcha (literally red tea but known as black tea in the west). This special hongcha is then stone ground using the same machines as traditional Japanese matcha, resulting in a powdered tea similar to what was used during the Song dynasty in China. Amazing to serve neat with only hot water or even with your favorite choice of milk. An adult's version of dark hot cocoa!
