明前龙井 "Ming Qian Long Jing" (March 15, 2025 harvest)
This year's harvest was delayed by about 10 days due to a fortunate chill that will improve the quality of this year's early harvest by slowing down the growth and giving the leaves a few more days to increase in sweetness.
A full handmade Dragon Well tea produced by the 3rd Generation Zong family. The tea undergoes a traditional processing method using a heated iron pan, with hand-pressing executed in several steps until the leaves are shiny, flat, and thoroughly dried. This intricate process is performed solely by seasoned tea makers, who skillfully shape and fire the delicate leaves in a few seconds, ensuring they are not burned or damaged while preserving their natural essence. The objective is to achieve an aromatic balance while developing a rich, lingering taste that lacks any vegetal aftertaste. The appealing fragrance from the high-temperature pan resembles freshly baked fruit bread but fades mysteriously after the first brew, leaving a delightful blend of tropical fruits and a lingering freshness.
There are different ways of brewing Dragon Well, depending on the time of year, here are three brewing techniques to skillfully make it.
