Our Korean teas are all hand-picked from awkward-shaped wild tree bushes that don't have the table bush shape of Japanese farms that are machine cut. Hand-picking yields the highest quality since only the desired leaves are picked. Afterward, the tea is refined by hand after the first firing to remove twigs and larger or damaged leaves. This wonderful byproduct is the same quality as the tea and has been transformed into a casual infusion. Twigs contain a lot of tannins and are well suited for creating a pronounced taste and aroma that, combined with the terroir of Hadong, produce a wonderfully unique tea. The roasted notes bring some familiarity with Houjicha, but the origin and tea cultivar have a funky umami kick, unlike any roasted tea we've had before.
